Date and Almond Cake


A scrumptious gooey cake is all I need to lift my mood. With short winter days and cold weather days, this cake is guaranteed to lift your spirits. Made with dates that are rich in iron and calcium, thats enough to convince me to stick one in the oven. Go on, try it.

Date and Almond Cake

5 oz butter

1 cup brown sugar (Demerara)

1 cup roughly chopped dates

1 cup ground almonds

3 eggs

1 cup plain flour

1 tsp baking powder

A pinch of Cardamom or nutmeg (optional)

Method:

1. Place butter and sugar in a pan and heat on low.
2. Once the sugar has melted add the dates and heat until the dates are mushy. Take it off heat and leave it to cool (20 minutes roughly).
3. Once it has cooled add the almonds and the eggs. Give it a good mix.
4. Finally sift in the flour, baking powder and cardamom/nutmeg. Give it a final mix.
5. Pour into a 20 x 20 square tin and bake on 180C until a skewer comes out clean.
